New York: Kee’s. No wonder there are regularly queues around the block, with ingredients from around the world and a little bit of magic from founder Kee Ling Tong, you have Lavender, Pineapple & Papaya, Sour Sap, Green Tea with Jasmine, Kaffir Lime, Blood Orange and Kiwi with Pear… plus a whole galaxy of scandalous chocs. The only limits are your imagination, your purse and your knicker elastic.

Paris: Pierre Hermé. It would be un énorme scandale not to include the Picasso of Pastry in any list of the maestros of macarons. Chocolat au lait et praliné croustillant, huile d’olive et vanille, marron et thé vert matcha, truffe blanche et noisette… oh, Pierre, will this joy never end? London: The Parlour at Sketch. Pierre Gagnaire’s OTT Parlour at  Sketch may look like the Mad Hatter’s tea party times ten, only here filled with the rich, slick, hip and occasional wannabe, but the macarons are surprisingly demure, though no less delicious for it - choc, pistachio, lemon, blackcurrant, raspberry and passionfruit, to nibble in or to go, J Lo.
