OMG, we’ve just died and gone to piggie, cow and little lambkin heaven. A heaven of tender grain fed eye fillet beef, moist Kurobuta Berkshire Pork loins and juicy frenched lamb racks. This carnivore heaven is actually the most astounding butcher we’ve ever seen, Victor Churchill, sitting on a tree-lined street in the zhushy suburb of Woollahra in Sydney, Australia.

It looks like a quaint European storefront from afar, with its forest green façade, but come closer, my pretty, and you’ll spy a cutting edge (geddit) museum of meat, a gallery of pork belly, a shrine to steak, a temple of thighs and tenderloin. It’s part Damien Hirst installation and part operating theatre. The interior sports a painstakingly laid mosaic Italian marble floor, timber beamed ceilings with hand carved copper fretwork, glass covered leather-clad walls in the kitchen, sausage shaped handles and a floor to ceiling glass walled cool room, complete with a cog gear and metal chain rack rotating prime cuts.

That’s all well and good, but the world needs another designer purveyor of expensive goods like it does swine flu, so how’s the beef? We’re happy to report that it’s pretty darn good. Fantastic in fact. For Victor Churchill is owned by Vic’s Premium Quality Meat, supplier to Oz’s top restaurants like Tetsuya’s, Quay, Longrain, Jacques Reymond and Cutler & Co. Gorgeous and delicious, how LUXE!

Here’s a tip. If you want Victor Churchill’s meat for less, on the first and last Saturday mornings of each month, between 8am and noon, you can buy direct from their warehouse. And you can’t shake a lamb’s tail at that.
